No-bake Protein Rice Cake Bars — crunchy rice cakes bound with Greek yogurt, peanut butter, honey and protein powder, topped with a drizzle of dark chocolate. A crunchy-sweet snack that eats like a candy bar.
Ingredients
- 4 rice cakes, crushed
- ¼ cup Greek yogurt
- 2 tbsp peanut butter
- 2 tbsp honey or maple syrup
- 1 scoop protein powder (flavor of your choice, e.g. vanilla)
- A little dark chocolate (low-calorie / low-sugar) for drizzling
Instructions

Crush the rice cakes into small crumbs in a bowl.

Add the Greek yogurt.

Add the peanut butter.

Pour in the honey or maple syrup.

Add the protein powder.

Mix everything well until a sticky, evenly combined mixture forms.

Press the mixture firmly into a square baking dish lined with parchment paper and smooth out the top.

Freeze for 30 minutes, or refrigerate for at least 3 hours.

Drizzle with melted dark chocolate.
