Protein Pancakes — fluffy banana-protein pancakes stacked high and topped with Greek yogurt, blueberries and honey. Made with just a banana, eggs, protein powder and a little flour. Around 38g of protein for the whole stack, ready in about 15 minutes.
Ingredients
- 1 banana
- 2 eggs
- 1.5 scoops protein powder
- 30 g flour
- 1 tsp baking powder
- Dash of cinnamon (to your liking)
- Dash of milk
- Toppings of your choice (e.g. fat-free Greek yogurt, blueberries, honey)
Instructions

Mash the banana with a fork in a bowl.

Add the eggs and mix together.

Add the protein powder and combine.

Add the flour, baking powder and cinnamon.

Add a dash of milk and whisk into a smooth batter.

Heat a non-stick pan over medium heat.

Pour the batter into the pan in portions and cook until bubbles form on the surface, then flip.

Stack the finished pancakes.

Top with Greek yogurt, blueberries and honey as desired.
