Fluffy Russian cottage-cheese fritters boosted with extra protein — crispy on the outside, creamy inside and perfect with Greek yogurt or fresh berries.
Ingredients
- 200 g low-fat cottage cheese (or quark)
- 1 whole egg
- 30 g vanilla protein powder
- 40 g oat flour (or all-purpose flour)
- 1 tsp baking powder
- 1 tbsp erythritol or sugar (optional)
- ½ tsp vanilla extract
- Pinch of salt
- Coconut oil or butter for frying
- Greek yogurt & fresh berries, to serve
Instructions

Drain excess liquid from the cottage cheese, then mix it with the egg, protein powder, flour, baking powder, sweetener, vanilla and salt until a soft dough forms.

Lightly flour your hands and shape the dough into 6–8 small patties.

Heat a non-stick pan with a little oil or butter over medium heat.

Fry the patties for 2–3 minutes per side until golden and crisp on the outside, then cover and steam for another 2 minutes so the center cooks through.

Serve warm with a dollop of Greek yogurt and fresh berries.
