
Mediterranean Gnocchi Salad

The viral Mediterranean gnocchi salad — fresh, easy and packed with flavour. Grilled gnocchi, arugula, juicy tomatoes and mini mozzarella tossed in a homemade basil pesto.
Ingredients
- 500 g gnocchi
- 100 g arugula (ruccola)
- 200 g cherry tomatoes, halved
- 125 g mini mozzarella, drained
- 60 g sun-dried tomatoes, roughly chopped
- 1 avocado, sliced
- 1 large handful fresh basil
- 2 tbsp olive oil
- 1 tbsp grated parmesan
- 1 tbsp pine nuts (or cashews)
- 1 small garlic clove
- Juice of ½ lemon
- Salt & pepper to taste
Instructions

Pan-fry the gnocchi in a little olive oil until golden and crisp on the outside, then let them cool slightly.

Blend basil, olive oil, parmesan, pine nuts, garlic and lemon juice into a pesto dressing. Season with salt and pepper.

Wash and dry the arugula and add it to a large bowl as the fresh green base.

Add tomatoes, mozzarella, sun-dried tomatoes and the gnocchi.

Slice the avocado just before serving and fold it in gently.

Drizzle with the basil pesto, toss carefully and enjoy immediately.
